Yesterday was Columbus Day
In honor of Columbus Day I cooked a meal with both
Old World Food and New World Food.

The Old World Food was represented by lentils and onions
while the New World Food was tomatoes and potatoes.
(I added one can of diced Italian-style tomatoes to the following recipe.)

1 | cup uncooked lentils |
1/2 | lb kielbasa, cut into 1 inch pieces |
1 | cup onions, chopped |
1 | cup celery, chopped |
1 | cup carrots, finely chopped |
1 | cup potatoes, diced |
2 | tablespoons chopped fresh parsley |
3 (16 | ounce) cans beef broth |
1/2 | teaspoon fresh ground black pepper |
1/8 | teaspoon nutmeg |
- Rinse lentils and drain.
- Place all ingredients in crockpot.
- Cook on low for 6 hours, stirring occasionally.
