Super Bowl Food

I have been meaning to post this since the Super Bowl.
My parents were visiting for my birthday, which was January 28th, and stayed with us until the Monday after Super Bowl. I had the Cauliflower Olive Salad recipe on my refrigerator and my mother thought it sounded good.

Well, I had received this recipe from my sister quite a while ago and had never made it. My daughter and son-in-law were coming over to watch the Super Bowl with us, my husband was making Chili Con Carne so we decided that Cauliflower Olive Salad would be a good accompaniment. We were right - this is SO good. And since the recipe makes a lot I was lucky enough to eat it throughout the week. It just gets better while sitting in the dressing.

OK, here's the recipe, with thanks to my sister and brother-in-law for providing it:

Ingredients:

6 cups Cauliflower Flowerets, broken up

1 Cup Chopped Green Bell Peppers

1 Cup Stuffed Green Olives, sliced

1 Can Chopped Black Olives (4.5 ounce can), drained

1/2 Cup Chopped Sweet Red Pepper

1/2 Cup Chopped Red Onion, optional


Dressing:

3 Tablespoons Lemon Juice

3 Tablespoons Apple Cider Vinegar

1/2 Teaspoon Sugar

1/4 Teaspoon Pepper

1/2 Cup Vegetable Oil


  1. In a large bowl, combine the cauliflower, green pepper, olives, red pepper and onion, if desired.
  2. In a small bowl, whisk the lemon juice, vinegar, sugar and pepper; gradually whisk in the oil. Pour over vegetables and stir to coat.
  3. Cover and refrigerate for at least 4 hours. Serve with slotted spoon.
