Sunshine Cake for my Birthday


My mother used to make Sunshine Cake for my birthday every year, per my request!

It is an Angel Food Cake and very nice as a light dessert. It would be very good served with fruit and ice cream!

SUNSHINE CAKE

4 Egg Yolks
3 Tablespoons Cold Water
1 1/2 Cups Sugar
1 1/2 Cups Flour
1/2 Cup Hot Water
1 Teaspoon Baking Powder
1/2 Teaspoon Cream of Tartar

Add sugar to the 4 egg yolks in a mixer and beat for 7 minutes.

Sift the flour and baking powder together. Then add the flour mixture to the bowl alternately with the hot water. Set aside.

In a separate bowl, beat the 4 egg whites and the cream of tartar until stiff peaks form.

Fold in the egg white mixture to the flour/egg yolk mixture.

Bake at 325 degrees for 60 - 75 minutes. Invert cake pan while it cools. Top with powdered sugar.

Raspberry and Chocolate Streusel Bars

My mother loves chocolate and raspberry
so I made these when my parents came to visit for Christmas.
Of course, I had extra to send along with her
as they continued on their road trip!

  • 2 1/2 cups all-purpose flour
  • 1 cup sugar
  • 3/4 cup finely chopped pecans
  • 1 egg,beaten
  • 1 cup (2 sticks) cold butter or margarine
  • 1 jar (12 oz.) seedless red raspberry jam
  • 1 1/3 cups (8 0z. pkg.) HERSHEY'S Dark Chocolate Baking Pieces Filled with Raspberry Creme

  1. Heat oven to 350 degrees F. Grease 13x9 x2-inch baking pan.
  2. Stir together flour, sugar, pecans and egg in large bowl. Cut in butter with pastry blender or fork until mixture resembles coarse crumbs; set aside 1 1/2 cups crumb mixture. Press remaining crumb mixture on bottom of prepared pan. Stir jam to soften; carefully spread over crumb mixture. Sprinkle with baking pieces. Crumble remaining crumb mixture evenly over top.
  3. Bake 40 to 45 minutes or until lightly browned. Cool completely in pan on wire rack; cut into bars.

Nan would have been 100 today!

My grandmother (we called her Nan) was born October 4th, 1906. She liked to cook German meals for us,
like Hasenpfeffer and Cow's Tongue with Raisin Gravy.

I always hated to see that cow tongue in the refrigerator.
~~~~~
But, in honor of one of her favorite meals, I am preparing a different version of Nan's cow tongue:

I found this recipe here for Cow Tongue Cookies

  • 2 c. sugar
  • 4 c. flour
  • 1 1/2 c. Crisco
  • 2 eggs, beaten
  • 1/2 c. molasses
  • 4 tsp. baking soda
  • 1 1/2 tsp. ginger
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. salt
Mix Crisco and sugar. Add eggs and molasses. Mix dry ingredients and add to above. Shape into balls and then roll like a finger. Roll in sugar and bake 15 minutes at 350 degrees. Makes 5 dozen.
